Spicy buffalo chicken burgers



Hi friends!! Hope youre going well! Today I'm sharing this recipe which is for those buffalo chicken lovers, who want something fancy right at their homes! So here it is:

INGREDIENTS FOR MARINADE:

  1. 1/4th kg boneless chicken piece divided into 2 (for a medium sized bun, divide into 3 for mini burgers)
  2. 1 cup of butter milk (use store bought OR mix vinegar and milk and set aside for 5 minutes OR mix 3/4th cup yogurt and 1/4th cup milk, set aside for 5 minutes) 
  3. 1 tbsp mustard paste
  4. salt to taste
  5. 1 tsp black pepper 
  6.  1 tsp lemon juice
  7. 1 tsp garlic paste

INGREDIENTS FOR SPICE MIX:

  1. 1 tsp red chili powder
  2. 1 tsp cayenne pepper/paprika powder
  3. pinch of coriander powder
  4. 1/2 tsp dried oregano

INGREDIENTS FOR BREADING:

  1. 1 cup plain flour(season with just a dash of salt, garlic powder, onion powder, black pepper)
  2. egg wash (1 egg mixed with water and seasoned with a pinch of red chili flakes )
  3. oil for frying



INGREDIENTS FOR ASSEMBLING:

  1. 1 tomato sliced
  2. lattice
  3. blue cheese dressing(traditionally preferred)/ranch dressing/thousand island dressing
  4. cheese slice (optional)
  5. buffalo sauce (either store bought or homemade -mix equal parts of hot sauce and butter,with a dash of brown sugar in sauce pan)
  6. burger buns- small, medium, large, whatever you like

METHOD:

  1. Marinate the flattened, pounded chicken in the marinade for 3-4 hours, covered!
  2. dip your index and middle finger in the spice mix and rub it onto each side of chicken.
  3. then dip the chicken in to the flour, then egg then flour.
  4. fry it till completely cooked
  5. then drain the oil
  6. dip it into buffalo sauce
  7. place your dressing onto the buns/add mustard if you like
  8. place you chicken, tomato,lattice and secure with a tooth pick.
  9. serve with fries!

NOTE: Please go easy on salt because the marinade, the flour, the dressing, the cheese and the Buffalo sauce all contain salt.
