Spinach & chicken grilled cheese

Hello again!
I'm here with yet another recipe! This time around it's again about cheese, which everyone loves i guess! The basic ingredients for this recipe are spinach and cheese, you could subtract the chicken if you are a vegetarian or you can replace it with corns or sun dried tomatoes, the list is end less! The most important part of this recipe is serving it quickly, so can make the batter a night ahead and just grill it the other day! So let's get started! :D

  1. 1 cup of cooked/thawed spinach (only leaves)
  2. 50 grams of shredded mozzarella (more if you want)
  3. 50 grams of shredded cheddar(if you don't have cheddar double the mozzarella)
  4. half cup of white sauce
  5. 1 cup of shredded chicken
  6. salt according to taste.
  7. 1/2 tsp of red chili flakes
  8. 1/2 tsp of oregano
  9. pinch of black pepper
  10. pinch of red chili powder
  11. 8-10 soft bread slices
  12. 4 tbsp of butter or mayonnaise for grilling
  13. 4 cheese slices for extra cheese lovers (optional)
  14. 1 tsp of garlic paste cooked in oil.
  15. chopped mushrooms (optional)


  1. In the cooked garlic add your spinach and mix properly.
  2. in a bowl, mix spinach, cheese, chicken, salt, pepper,red chilies, oregano, white sauce.
  3. check the seasonings, add more if you desire!
  4. let the mixture cool down.
  5. Butter the outer sides of your bread. (you can use mayo to grill too, I learnt recently)
  6. Add your filling to you bread, spread evenly.
  7. now add a cheese slice and top up with a bread.
  8. Butter your grill pan or non stick pan.
  9. place your sandwiches over medium to low heat.
  10. Serve IMMEDIATELY when both sides are golden and crispy!
