Heyy everyone!!!
I'm back again with yet another breakfast recipe because these days the only meal I prepare is a breakfast! :p The reason is that I'm busy with my upcoming exams so I'm not really allowed to cook! 😝 However being foodie that I am, I do sneak into the kitchen whenever I'm free.
So today I'm bringing to you my humble version of the middle Eastern, tomato based breakfast, Shakshuka! I'm using all the basic ingredients required because I had only these basic ones, you can add jalapeños, red and green bell peppers etc. So let's begin!

INGREDIENTS:

  1. 5 pealed, finely diced/pureed tomatoes. (You can use canned)
  2. 1 medium onion, chopped
  3. 1/2 tsp of garlic paste
  4. 1 small, boiled potato- sliced (optional)
  5. Salt
  6. Pinch of black pepper
  7. 1/3rd tsp of red pepper
  8. 2 tbsp ketchup
  9. 1 tsp ground cumin
  10. 1/2 tsp all spice
  11. 2 eggs
  12. Butter or oil- 2 tbsp
  13. Chopped coriander, cilantro or parsley
  14. Pinch of paprika
  15. 4 tbsp water
  16. Non-stick pan




METHOD:







  1. In the pan, add butter or oil.
  2. Now cook onions into the pan, for 2-3 minutes.
  3. Now add garlic and cumin, cook for a minute.
  4. Now add potatoes and tomatoes.
  5. Add water and rest of the spices except all-spice
  6. Now cover and cook for 15 minutes on low.
  7. Now crack open you eggs on two opposite sides of the pan. (Carefully)
  8. Cover it and cook on low heat till you get the desired consistency of your egg! (I loved mine, cooked completely so it took some time)
  9. Now sprinkle all spice and freshly chopped coriander.
  10. Serve with fresh bread!

SERVES: 2-3

NOTE: You can add chicken or other mince meat into this, also this could be spicy so taste it at every step!
