Grilled chicken fajita sandwich

Hi everyone! I know it's been long since I've posted but today I decided to make these juicy and delicious chicken fajita sandwiches that I had in my mind since months!! Not gonna lie I was preparing for club sandwiches but when I saw that red bell pepper I knew what I had to do next! So let's get started!

INGREDIENTS FOR CHICKEN:

  1. 1/2 chicken breast- cubed
  2. Salt
  3. Pinch of black pepper
  4. 1 tbsp of red chilli powder
  5. 1 tsp of coriander powder
  6. 1 tbsp paprika
  7. Half tsp brown sugar
  8. 1 tsp cumin powder
  9. 1 tsp garlic paste/powder
  10. 2 tbsp oil for shallow frying



OTHER INGREDIENTS FOR VEGETABLES: (all vegetables cut into strips)

  1. 1 red capsicum 
  2. Half green capsicum
  3. 1 medium sized onion
  4. 1 tomato (optional)
  5. Cheese
  6. 1 tbsp olive oil
  7. 1 tsp lemon juice
  8. Salt
  9. 4 slices of bread

INGREDIENTS FOR SAUCE:

  1. 1 part mayonnaise
  2. 1 part ketchup
  3. Mustard paste
  4. 1/2 tsp lemon juice
  5. Pinch of black pepper
  6. Garlic powder
  7. Red chilli powder/paprika
  8. Salt pinch of brown sugar

METHOD:




  1. Add all the spices to your chicken, let it stand for 5 minutes.
  2. Now cook it medium high heat until its cooked and there is no water.
  3. Now add olive oil, salt and lemon to your vegetables and grill them for a minute.
  4. Combine all the sauce ingredients.
  5. Toast your bread.
  6. Spread the sauce on both the slices.
  7. Divide chicken and vegetables and cheese in two sandwiches.
  8. Serve hot with fries.
