Garlic Mashed Potatoes

What's up? I hope you're doing well. I've been missing since the last 3 months and there is nothing to blame. I simply had zero motivation. Anyway! Today's recipe is simple, easy and delicious. I literally eat this with rice after adding some chicken. You can serve it as a side to any meat or simply eat it because who doesn't love mashed potatoes?
INGREDIENTS: (serves 2)
- 2 large potatoes (the starchier the better)
- 4 tbsp of butter/margarine
- 1 tsp/2 cloves of minced garlic.
- 3 tbsp cream
- Quarter cup of whole milk (add more if you like it real thin)
- Salt
- 1 tsp black pepper
- 1 tsp dried oregano/thyme or mixed Italian seasoning.
- Red chili flakes- a pinch or more.
- Shredded cheese- according to choice or availability.
- Add ons: Bite sized chicken pieces, chopped pickled mango, olives, 1 tbsp lemon juice etc.
METHOD:
- Peel your potatoes and boil them with salt.
- Mash after straing them.
- On a pan add butter and garlic, let it cook for about 40 seconds, mix well.
- Then add Italian seasoning, cream, milk, cheese, red pepper flakes, salt, black pepper. Mix well. Let it boil.
- Now add this mix to your potatoes.
- Mash until everything is combined. Taste it if you want more salt.
- Serve immediately with more butter on top.
