Egg and jalapeno breakfast sandwich
Hello everyone! I hope you're coping well and doing okay in these extremely difficult times. Cooking is something that has helped me distract myself and today I'm sharing this easy recipe that helps you start your day all energized. I've been making this sandwich for many years now because its healthy and has my favorite ingredient ever, an egg!
So it basically includes a Gordon Ramsay style scrambled egg but I do season It differently and add cheese and jalapenos to it. YUMMY! Wait until you try, you can add olives, mushrooms etc whatever you like or have on hand.

Ingredients:

  1. 4 eggs
  2. 2 slices of cheddar cheese or more
  3. Salt to taste
  4. Red chili flakes- a pinch
  5. Dried oregano- half tsp
  6. Pickled jalapenos- chopped 2-3 tbsp
  7. 1 green chili- chopped 
  8. Freshly ground black pepper-half tsp
  9. 2 tbsp butter 
  10. 4 Slices of bread- I used bran bred
  11. 2 tbsp mustard sauce 
  12. Mortadella sausage slices 
  13. Non stick pan and a silicon spatula
  14. Iceberg lettuce 

Recipe:

  1. In your non stick pan, on low heat, add butter and eggs. Mix them well on and off the heat to keep the soft. Add salt, oregano, red chili flakes, black pepper, green chili, jalapenos. 
  2. Mix well then add cheese, shredded or in slice form. 
  3. Lightly butter the bread slices (optional) then toast them.
  4. Spread mustard paste on both sides.
  5. Add lettuce, then the scrambled eggs, then 4  mortadella slices (warmed in the same pan), more jalapenos if you like.
  6. Serve warm with your favorite warm beverage. Again you can make it from 3 eggs or more, add spinach to the egg, use olive oil to further make it healthy etc. Leave a comment about how you make your breakfast sandwich.
