Grilled chicken with roasted vegetables 

HI everyone! I'm back after 3 years! God! I've been so busy with so much in my life that I had no motivation to post but I still cooked aloot even more than earlier. I got married and my husband and I share similar interests in cooking and eating ofcourse. 
Lately we wanted to eat healthy and be more alert while studying so we've invested in frozen vegetables and things that are healthy, easily put together and fulfilling at the same time. This recipe is the easiest one-pot dish with lots of variations according to what you have on hand.

Ingredients for chicken:

  1. Chicken fillet- 1 used 4
  2. 1 tbsp ginger/garlic paste
  3. Salt according to taste
  4. 1/2 tsp freshly grated black pepper 
  5. 1 tsp mustard sauce 
  6. 1 tsp lemon juice
  7. 1/2 tsp red pepper flakes
  8. Dried oregano
  9. 2 tbsp olive oil

Ingredients for vegetables :

  1. Broccoli 
  2. Carrots 
  3. Capsicum 
  4. Peas
  5. Corn
  6. Potatoes 
  7. 1 tsp soy sauce 


  1. Season the chicken with the blend of ingredients and marinate it for 20 minutes atleast. (you can add 1 tsp corn flour more more color) 
  2. Using 2 tbsp of olive oil in a non stick pan add the chicken, 5 minutes each side until it gets a beautiful brown color. 
  3. Remove the chicken, add the vegetables in the same pan using high-medium heat cook the vegetables for 3 minutes. Add black pepper and a touch of soy sauce. Mix well. 
  4. Serve immediately as breakfast of lunch or dinner. I added hard boiled egg on the side. 
  5. Tip: I used frozen vegetables but you can use fresh ones, whatever is available to you and as much as you want.
